With summer on the way, grilled food will be a requirement for most outdoor parties. A large amount of people default to BBQ or Burgers on the grill but expand your horizons with Grilled Fruit! This recipe calls is the perfect complement meal to go with your other grilled delicacies. (2 servings is the maximum you should eat in my opinion)


Standing Time (soaking
skewers): 30 minutes

Prep Time: 30 minutes

Grilling Time: 2-3 minutes

Yield: 8 servings

DIPPERS
8 4-inch bamboo skewers
8 medium strawberries
8 1-inch cubes fresh
pineapple
8 1-inch wedges nectarine
8 1-inch chunks peeled
kiwi fruit

CREAMY VANILLA DIP
1 8-ounce container
vanilla-flavored light
yogurt
1 snack-size vanillaflavored,
sugar-free
refrigerated pudding
(about 106 g or
3¾ ounces)
½ teaspoon vanilla extract
(optional)

1. At least 30 minutes before grilling, soak bamboo skewers in water.

2. Preheat gas grill to medium for direct grilling. Alternately thread different fruits on bamboo skewers, leaving 1⁄4 inch between pieces.

3. Grill fruit, uncovered, for 2 to 3 minutes or until heated through, turning occasionally. Serve with small individual cups of Creamy Vanilla Dip.

CREAMY VANILLA DIP
Combine all ingredients in small bowl. If desired, cover and refrigerate for up to 1 day. Makes about 1 cup.
