Ingredients
Chicken
- 2 large boneless skinless chicken breasts (about 1 lb), halved horizontally into 4 cutlets
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 large egg
- 1 tbsp water
Crust
- 2/3 cup blanched almond flour
- 1/3 cup grated Parmesan
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Olive oil spray or cooking spray
Topping
- 1 cup no-sugar-added marinara
- 1 cup shredded part-skim mozzarella
- Fresh basil, for serving
Directions
- Heat the oven to 425°F. Set a wire rack on a rimmed baking sheet and coat the rack with cooking spray.
- Pound the cutlets to an even 1/2-inch thickness between sheets of plastic wrap. Season both sides with salt and pepper.
- Beat the egg with the water in a shallow dish. In a second shallow dish, mix the almond flour, Parmesan, Italian seasoning and garlic powder.
- Dip each cutlet in egg, let the extra drip off, then press firmly into the almond mixture to coat both sides. Set on the rack and spray the tops lightly.
- Bake 15 to 18 minutes, until golden and the chicken reaches 165°F.
- Spoon 1/4 cup marinara over each cutlet and top with 1/4 cup mozzarella. Bake 5 to 7 minutes more, until the cheese is melted. Broil 1 to 2 minutes for browned spots if you like.
- Top with basil and serve with a green salad or roasted vegetables.
