Hearty scrambled egg, bacon, spinach and cheddar burritos wrapped in low-carb tortillas. Freeze a batch for busy mornings.
Ingredients
Filling
- 8 large eggs
- 2 tbsp 2% milk
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp unsalted butter
- 1/2 red bell pepper, diced
- 1/4 cup diced onion
- 2 cups baby spinach
- 6 slices cooked bacon, chopped
- 3/4 cup shredded sharp cheddar
To wrap
- 6 low-carb high-fiber tortillas (8 inch)
- 6 tbsp jarred salsa, for serving
Directions
- Whisk the eggs, milk, salt and pepper in a bowl.
- Melt the butter in a large nonstick skillet over medium heat. Add the bell pepper and onion and cook 3 to 4 minutes, until soft.
- Add the spinach and stir until wilted, about 1 minute.
- Lower the heat to medium-low and pour in the eggs. Stir slowly with a spatula until softly set, 2 to 3 minutes. Remove from heat while still slightly moist and fold in the bacon.
- Warm the tortillas in a dry skillet or the microwave for 10 to 15 seconds so they fold without cracking.
- Divide the egg mixture among the 6 tortillas, sprinkle each with 2 tablespoons of cheddar, fold in the sides and roll up tightly.
- Toast seam side down in the skillet over medium heat 1 to 2 minutes per side until golden. Serve with salsa.
