A warm, fiber-rich cinnamon muffin that bakes in your microwave in about 90 seconds.
Ingredients
Dry
- 1/4 cup ground flaxseed
- 1 tbsp blanched almond flour
- 1 tbsp brown monk fruit sweetener
- 1 tsp ground cinnamon
- 1/2 tsp baking powder
- Pinch of salt
Wet
- 1 large egg
- 2 tbsp unsweetened almond milk
- 1 tsp unsalted butter, melted, plus a little for the mug
- 1/4 tsp vanilla extract
Directions
- Grease a 12-ounce microwave-safe mug with a little butter.
- Stir the flaxseed, almond flour, monk fruit, cinnamon, baking powder and salt together right in the mug.
- Add the egg, almond milk, melted butter and vanilla. Mix with a fork until smooth, scraping the bottom edges so no dry pockets remain.
- Microwave on high 80 to 100 seconds, until puffed and the top springs back when touched. Microwaves vary, so start checking at 70 seconds.
- Let it cool 1 minute, then eat from the mug or run a knife around the edge and tip it out onto a plate.
