A golden, herb-flecked frittata packed with spinach and salty feta that goes from stovetop to oven in one skillet.
Ingredients
Eggs
- 8 large eggs
- 1/4 cup 2% milk
- 1 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp black pepper
Filling
- 1 tbsp olive oil
- 1/2 medium onion, finely chopped
- 2 cloves garlic, minced
- 5 oz baby spinach
- 3 oz feta, crumbled (about 1/2 cup)
- 2 tbsp chopped fresh dill or parsley
Directions
- Heat the oven to 375°F with a rack in the middle.
- Whisk the eggs, milk, oregano, salt and pepper in a bowl until frothy.
- Heat the olive oil in a 10-inch oven-safe skillet over medium heat. Add the onion and cook 4 to 5 minutes, until soft. Add the garlic and cook 30 seconds.
- Add the spinach a handful at a time, stirring until wilted, about 2 minutes. Spread the vegetables evenly across the pan.
- Pour in the eggs, then scatter the feta and herbs over the top. Cook without stirring 2 to 3 minutes, until the edges begin to set.
- Move the skillet to the oven and bake 10 to 12 minutes, until the center is just set and no longer jiggles.
- Let it rest 5 minutes, then loosen the edges with a spatula and cut into 6 wedges.
