Strawberry Shortcake with Almond Flour Biscuits

Ingredients

Strawberries

  • 2 cups sliced strawberries
  • 1 tbsp granulated monk fruit sweetener

Biscuits

  • 1 1/2 cups blanched almond flour
  • 2 tbsp coconut flour
  • 2 tbsp granulated monk fruit sweetener
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 4 tbsp cold unsalted butter, cubed
  • 1 large egg
  • 1/4 cup heavy cream

Whipped cream

  • 3/4 cup cold heavy cream
  • 1 tbsp powdered monk fruit sweetener
  • 1/2 tsp vanilla extract

Directions

  1. Toss the strawberries with 1 tbsp monk fruit and set aside at room temperature so they release their juice while you bake.
  2. Heat the oven to 400°F. Line a baking sheet with parchment paper.
  3. In a bowl, whisk the almond flour, coconut flour, 2 tbsp monk fruit, baking powder and salt. Cut in the cold butter with a fork or pastry cutter until it looks like coarse crumbs with some pea-size bits.
  4. Whisk the egg and 1/4 cup cream together, then stir into the flour mixture just until a sticky dough forms.
  5. Scoop 8 equal mounds onto the sheet, about 2 inches apart, and pat each into a round about 3/4 inch thick.
  6. Bake 12 to 15 minutes, until the tops are golden brown and the bottoms are firm. Cool at least 15 minutes.
  7. Whip the 3/4 cup cold cream, powdered monk fruit and vanilla to soft peaks.
  8. Split each biscuit, spoon about 1/4 cup strawberries and their juice over the bottom, add a dollop of whipped cream and set the top on. Serve right away.
Tip: Bake the biscuits ahead and keep them airtight, but assemble just before serving so they stay tender instead of soggy.
