Turkey Meatballs in Marinara

Tender Italian-seasoned turkey meatballs bound with almond flour, baked, then simmered in marinara and served over zucchini noodles.

Ingredients

Meatballs

  • 1 lb 93% lean ground turkey
  • 1/3 cup blanched almond flour
  • 1/4 cup grated Parmesan
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh parsley
  • 1 tsp Italian seasoning
  • 1/2 tsp fennel seeds, lightly crushed (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Sauce and serving

  • 2 1/2 cups no-sugar-added marinara
  • 3 medium zucchini, spiralized
  • 1 tsp olive oil
  • Fresh basil, for serving

Directions

  1. Heat the oven to 400°F. Line a rimmed baking sheet with parchment.
  2. In a large bowl, gently mix the turkey, almond flour, Parmesan, egg, garlic, parsley, Italian seasoning, fennel, salt and pepper with your hands until just combined. Overmixing makes them dense.
  3. Wet your hands and roll the mixture into 20 meatballs, about 1 1/2 inches across. Set them on the baking sheet.
  4. Bake 15 to 18 minutes, until lightly browned and 165°F in the center.
  5. Meanwhile, warm the marinara in a large skillet over medium heat. Add the baked meatballs and simmer 5 minutes, spooning sauce over them.
  6. Heat the olive oil in another skillet over medium-high heat and toss the zucchini noodles 2 to 3 minutes, just until warm.
  7. Divide the noodles among 4 plates and top with 5 meatballs, sauce and basil.
Tip: Read marinara labels. Many jars have 8 or more grams of added sugar per half cup. Look for ones labeled no sugar added with 6 grams of carbs or less.
