Apple Crisp with Pecan Oat Topping

Ingredients

Apple filling

  • 2 medium apples (Granny Smith or Honeycrisp), peeled and thinly sliced
  • 1 tbsp lemon juice
  • 2 tbsp brown monk fruit sweetener
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp coconut flour

Pecan oat topping

  • 1/2 cup blanched almond flour
  • 1/2 cup chopped pecans
  • 1/4 cup old-fashioned rolled oats
  • 1/3 cup brown monk fruit sweetener
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 4 tbsp cold unsalted butter, cubed

Directions

  1. Heat the oven to 375°F. Grease a 9-inch pie dish.
  2. Toss the apple slices with the lemon juice, then with the brown monk fruit, cinnamon, nutmeg and coconut flour. Spread evenly in the dish.
  3. For the topping, stir the almond flour, pecans, oats, brown monk fruit, cinnamon and salt in a bowl. Cut in the cold butter with your fingertips until it forms crumbly clumps.
  4. Scatter the topping evenly over the apples.
  5. Bake 35 to 40 minutes, until the topping is golden brown, the juices bubble at the edges and a knife slides easily into the apples. Tent with foil if the topping darkens before the apples are tender.
  6. Cool 15 minutes so the juices thicken, then spoon into 8 portions.
Tip: Slice the apples thin, about 1/8 inch, so two apples spread across the whole dish and cook through in the same time as the topping.
