Ingredients
Crust and crumble
- 2 1/2 cups blanched almond flour
- 1/3 cup granulated monk fruit sweetener
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 1 large egg
Blueberry filling
- 1 1/2 cups fresh or frozen blueberries
- 2 tbsp granulated monk fruit sweetener
- 1 tbsp lemon juice
- 1 tbsp chia seeds
Directions
- Heat the oven to 350°F. Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
- In a saucepan over medium heat, cook the blueberries, 2 tbsp monk fruit and lemon juice, stirring and mashing some berries, until bubbling and juicy, 5 to 6 minutes. Stir in the chia seeds and set aside to thicken.
- In a bowl, stir the almond flour, 1/3 cup monk fruit, cinnamon and salt. Stir in the melted butter and egg until a crumbly dough forms.
- Set aside 1 cup of the dough. Press the rest firmly into the bottom of the pan.
- Bake the crust 12 minutes, until the edges are lightly golden.
- Spread the blueberry filling over the warm crust. Crumble the reserved dough over the top in small clumps.
- Bake 25 to 33 minutes more, until the crumble is golden brown and the filling bubbles at the edges.
- Cool completely in the pan, then chill 1 hour for the cleanest cuts. Lift out and cut into 16 bars.
