Fudgy Almond Flour Brownies

Dense, fudgy chocolate brownies made with almond flour, cocoa and unsweetened baking chocolate.

Ingredients

Chocolate base

  • 1/2 cup unsalted butter
  • 2 oz unsweetened baking chocolate, chopped
  • 3/4 cup granulated monk fruit sweetener
  • 3 large eggs, room temperature
  • 1 tsp vanilla extract

Dry

  • 3/4 cup blanched almond flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Fold in

  • 1/3 cup sugar-free dark chocolate chips

Directions

  1. Heat the oven to 350°F. Line an 8x8-inch baking pan with parchment paper, leaving some overhang on two sides.
  2. Melt the butter and chopped baking chocolate together in a microwave-safe bowl in 30 second bursts, stirring each time, until smooth. Cool 5 minutes.
  3. Whisk the monk fruit into the chocolate, then whisk in the eggs one at a time and the vanilla. Whisk hard for about 1 minute until glossy.
  4. Add the almond flour, cocoa, baking powder and salt. Stir until no dry streaks remain, then fold in the chocolate chips.
  5. Spread the batter evenly in the pan.
  6. Bake 20 to 25 minutes, until the top is set and slightly crackly and a toothpick in the center comes out with moist crumbs, not wet batter.
  7. Cool in the pan at least 1 hour before lifting out and cutting into 16 squares. They slice cleanest after chilling.
Tip: Pull them at the moist-crumb stage. Almond flour brownies keep setting as they cool, and overbaking turns fudgy into cakey.
