A soft peanut butter and almond flour base under a snappy sugar-free chocolate layer, no oven needed.
Ingredients
Peanut butter base
- 1 cup blanched almond flour
- 1/2 cup natural creamy peanut butter (no sugar added)
- 4 tablespoons unsalted butter, melted
- 1/3 cup powdered monk fruit sweetener
- 1 teaspoon vanilla extract
- Pinch of salt
Chocolate layer
- 2/3 cup sugar-free dark chocolate chips
- 1 tablespoon natural creamy peanut butter
- 1 teaspoon coconut oil
Directions
- Line an 8 x 8-inch pan with parchment, leaving some hanging over two sides as handles.
- Stir the melted butter, 1/2 cup peanut butter, powdered sweetener, vanilla and salt until smooth. Stir in the almond flour until it forms a soft, thick dough.
- Press the dough evenly into the pan with your fingers or the bottom of a measuring cup.
- Microwave the chocolate chips, 1 tablespoon peanut butter and coconut oil in 20-second bursts, stirring each time, until just melted and glossy.
- Spread the chocolate over the base in a thin even layer.
- Refrigerate at least 2 hours, until the chocolate is firm. Lift out with the parchment, let stand 5 minutes, then cut into 16 squares with a hot knife.
