A moist, chocolatey almond flour loaf that hides a full zucchini and has about 4 g net carbs a slice.
Ingredients
Dry
- 2 cups blanched almond flour
- 1/3 cup unsweetened cocoa powder
- 2/3 cup granulated monk fruit sweetener
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp salt
Wet
- 3 large eggs
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1 1/2 cups shredded zucchini, squeezed dry (about 1 medium)
Fold in
- 1/3 cup sugar-free dark chocolate chips
Directions
- Heat the oven to 350°F. Grease a 9x5-inch loaf pan and line it with parchment paper, leaving overhang on the long sides.
- Shred the zucchini on the large holes of a box grater, then wrap it in a clean towel and squeeze out as much liquid as you can.
- In a large bowl, whisk the almond flour, cocoa, monk fruit, baking powder, baking soda, cinnamon and salt.
- In another bowl, whisk the eggs, melted butter and vanilla. Stir into the dry ingredients, then fold in the zucchini and most of the chocolate chips.
- Spread the batter in the pan, smooth the top and scatter the remaining chips over it.
- Bake 50 to 60 minutes, until the top is firm and a skewer in the center comes out clean or with a few moist crumbs. If the top darkens too fast, tent loosely with foil after 35 minutes.
- Cool in the pan 20 minutes, then lift out and cool completely on a rack before slicing into 12 pieces.
