Ingredients

  • 2 cups blanched almond flour
  • 4 tablespoons unsalted butter, softened
  • 1/3 cup brown monk fruit sweetener
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/3 cup sugar-free dark chocolate chips

Directions

  1. Heat oven to 350°F. Spread the almond flour on a rimmed baking sheet and toast 5 to 6 minutes, stirring once, until it smells nutty but is not browned. Cool completely.
  2. Beat the softened butter and brown sweetener until creamy, about 1 minute. Beat in the cream, vanilla and salt.
  3. Mix in the cooled almond flour until a soft dough forms. Stir in the chocolate chips.
  4. Roll into 20 balls, about 1 tablespoon each, and set on a parchment-lined plate.
  5. Chill 20 minutes to firm. Store covered in the fridge up to 1 week or freeze up to 2 months.
Tip: Toasting the almond flour adds a buttery, baked flavor and is a smart food safety step for any raw dough.
Dad jokeI told my cookie dough it could not go in the oven today. It took it pretty raw.
