The classic stovetop no-bake cookie, chocolate and peanut butter, made with coconut and hemp hearts in place of oats.
Ingredients
Chocolate base
- 4 tablespoons unsalted butter
- 1/3 cup granulated monk fruit sweetener
- 1/4 cup heavy cream
- 2 tablespoons unsweetened cocoa powder
Stir in
- 1/2 cup natural creamy peanut butter (no sugar added)
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 1/2 cups unsweetened shredded coconut
- 1/4 cup hemp hearts
Directions
- Line a baking sheet with parchment paper.
- Combine the butter, granulated sweetener, cream and cocoa in a medium saucepan over medium heat. Stir until melted, then bring to a full rolling boil.
- Boil exactly 1 minute, stirring constantly, then remove from the heat.
- Stir in the peanut butter, vanilla and salt until smooth. Stir in the coconut and hemp hearts until evenly coated.
- Working quickly, drop 16 heaping tablespoons onto the parchment and flatten each slightly with the back of the spoon.
- Refrigerate 30 minutes, until set. Store covered in the fridge.
