A tender, warmly spiced pumpkin loaf with toasted pecans, made with almond and coconut flour.
Ingredients
Dry
- 1 1/2 cups blanched almond flour
- 1/3 cup coconut flour
- 2/3 cup brown monk fruit sweetener
- 2 tsp baking powder
- 1/2 tsp baking soda
- 2 1/2 tsp pumpkin pie spice
- 1/2 tsp salt
Wet
- 1 cup canned pumpkin puree (not pie filling)
- 4 large eggs
- 1/3 cup unsalted butter, melted
- 1/4 cup unsweetened almond milk
- 1 tsp vanilla extract
Fold in
- 1/3 cup chopped pecans
Directions
- Heat the oven to 350°F. Grease a 9x5-inch loaf pan and line it with parchment paper.
- In a large bowl, whisk the almond flour, coconut flour, brown monk fruit, baking powder, baking soda, pumpkin pie spice and salt, breaking up any lumps.
- In another bowl, whisk the pumpkin, eggs, melted butter, almond milk and vanilla until smooth.
- Stir the wet ingredients into the dry until evenly combined. Let the batter rest 5 minutes so the coconut flour can absorb liquid. It will be thick.
- Fold in most of the pecans, spread the batter in the pan and sprinkle the rest on top.
- Bake 55 to 65 minutes, until the top is deep golden and a skewer in the center comes out clean. Tent with foil after 40 minutes if it is browning fast.
- Cool in the pan 20 minutes, then lift out and cool completely before cutting into 12 slices. It is fragile while warm.
