Caprese Skewers

Cherry tomatoes, fresh mozzarella and basil on a stick, with a drizzle of herb olive oil and balsamic.

Ingredients

Marinade

  • 2 tablespoons olive oil
  • 1/4 teaspoon dried Italian seasoning
  • 1/8 teaspoon salt
  • Black pepper to taste

Skewers

  • 12 small fresh mozzarella balls (ciliegine)
  • 24 cherry tomatoes
  • 24 small fresh basil leaves
  • 2 teaspoons balsamic vinegar

Directions

  1. In a small bowl, stir the olive oil, Italian seasoning, salt and pepper. Add the mozzarella balls, toss and refrigerate 30 minutes.
  2. Rinse the tomatoes and basil and pat completely dry.
  3. On each of 12 small skewers, thread a tomato, a basil leaf, a mozzarella ball, another basil leaf and a second tomato.
  4. Arrange on a platter and drizzle with the remaining herb oil from the bowl.
  5. Drizzle the balsamic vinegar over the top just before serving.
Tip: Skip store-bought balsamic glaze. Most are thickened with sugar. A little plain balsamic gives the same tang.
