Ingredients
Cauliflower
- 1 medium head cauliflower, cut into bite-size florets (about 5 cups)
- 1 tablespoon avocado oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
Buffalo sauce
- 1/3 cup buffalo wing sauce
- 1 tablespoon butter, melted
For serving
- 4 celery stalks, cut into sticks
- Greek yogurt ranch or blue cheese dressing (optional)
Directions
- Heat oven to 425°F. Line a large rimmed baking sheet with parchment.
- Toss the florets with the avocado oil, garlic powder, smoked paprika and salt. Spread in a single layer with space between pieces.
- Roast 20 minutes, flipping once, until the edges are browned and a fork slides into the stems with a little resistance.
- Whisk the buffalo sauce and melted butter together in a large bowl. Add the hot cauliflower and toss to coat.
- Return the cauliflower to the baking sheet and roast 8 to 10 minutes more, until the sauce is sticky and clinging to the florets.
- Serve hot with celery sticks and ranch for dipping.
