Chicken Fajita Bowls with Cauliflower Rice

Sheet pan fajita chicken and charred peppers over cilantro lime cauliflower rice, finished with avocado, salsa and sour cream.

Ingredients

Fajitas

  • 1 1/2 lb boneless skinless chicken breast, sliced into strips
  • 3 bell peppers (mixed colors), sliced
  • 1 medium onion, sliced
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 tsp salt

Cilantro lime cauliflower rice

  • 1 1/2 lb riced cauliflower (fresh or frozen, about 6 cups)
  • 1 tbsp avocado oil
  • 2 tbsp lime juice
  • 1/4 cup chopped fresh cilantro
  • 1/4 tsp salt

Toppings

  • 1 avocado, sliced
  • 1/4 cup jarred salsa
  • 1/4 cup sour cream

Directions

  1. Heat the oven to 425°F. Line a large rimmed baking sheet with parchment.
  2. Toss the chicken, peppers and onion with the olive oil, chili powder, cumin, smoked paprika, garlic powder and salt right on the pan. Spread in a single layer.
  3. Roast 20 to 25 minutes, stirring once, until the peppers are charred at the edges and the chicken reaches 165°F.
  4. Meanwhile, heat the avocado oil in a large skillet over medium-high heat. Add the cauliflower rice and cook 5 to 7 minutes, stirring occasionally, until tender and any liquid has cooked off.
  5. Stir in the lime juice, cilantro and salt.
  6. Divide the cauliflower rice among 4 bowls, top with the fajita chicken and vegetables, and finish with avocado, salsa and a spoonful of sour cream.
Tip: Let the cauliflower rice sit in the hot pan for a minute between stirs. A little browning gives it a toasty, rice-like flavor.
