Stuffed Bell Peppers with Turkey and Cauliflower Rice

Tex-Mex stuffed peppers filled with seasoned ground turkey, cauliflower rice and tomatoes under a blanket of melted cheddar.

Ingredients

Peppers

  • 4 large bell peppers, halved lengthwise, seeds and ribs removed

Filling

  • 1 tbsp olive oil
  • 1/2 medium onion, diced
  • 2 cloves garlic, minced
  • 1 lb 93% lean ground turkey
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups riced cauliflower
  • 1 can (14.5 oz) diced tomatoes, drained

Topping

  • 1 cup shredded sharp cheddar
  • 2 tbsp chopped fresh cilantro

Directions

  1. Heat the oven to 375°F. Arrange the pepper halves cut side up in a 9x13-inch baking dish.
  2. Heat the olive oil in a large skillet over medium-high heat. Cook the onion 3 to 4 minutes, then add the garlic and turkey and cook, breaking it up, 6 to 7 minutes, until no pink remains.
  3. Stir in the chili powder, cumin, salt and pepper, then add the cauliflower rice and drained tomatoes. Cook 4 to 5 minutes, until the cauliflower is tender and most of the liquid is gone.
  4. Pack the filling into the pepper halves, mounding it slightly.
  5. Pour 1/4 cup of water into the bottom of the dish, cover tightly with foil and bake 25 minutes.
  6. Uncover, top each pepper with cheddar and bake 10 to 15 minutes more, until the peppers are tender and the cheese is melted and bubbly.
  7. Sprinkle with cilantro and serve.
Tip: Halving the peppers lengthwise instead of cutting off the tops means they cook through evenly and you skip the parboiling step.
