Ingredients
Mousse
- 2 medium ripe avocados, pitted and scooped
- 1/4 cup unsweetened cocoa powder
- 1/3 cup powdered monk fruit sweetener
- 1/4 cup unsweetened almond milk
- 3 tablespoons heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
Garnish
- 12 fresh raspberries (about 1/4 cup)
Directions
- Add the avocado, cocoa, powdered sweetener, almond milk, cream, vanilla and salt to a food processor or blender.
- Blend 1 to 2 minutes, scraping down the sides twice, until completely smooth with no green flecks.
- Taste and add another tablespoon of almond milk if it is too thick to swirl.
- Spoon into 4 small glasses or ramekins. Chill 30 minutes to firm and deepen the flavor.
- Top each with 3 raspberries just before serving.
