Egg Roll in a Bowl

All the savory garlic, ginger and soy flavor of an egg roll filling, stir-fried in one skillet in about 25 minutes with no wrapper.

Ingredients

Stir-fry

  • 1 tbsp avocado oil
  • 1 lb lean ground turkey (or ground pork)
  • 1/2 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 bag (14 oz) coleslaw mix (about 6 cups)
  • 4 green onions, sliced, divided

Sauce

  • 3 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 to 2 tsp sriracha or other hot sauce

Garnish

  • 1 tsp sesame seeds

Directions

  1. Stir the soy sauce, rice vinegar, sesame oil and sriracha together in a small bowl.
  2. Heat the avocado oil in a large skillet or wok over medium-high heat. Add the turkey and cook, breaking it up, 5 to 6 minutes, until browned and no pink remains.
  3. Add the onion and cook 2 minutes, then stir in the garlic, ginger and the white parts of the green onions and cook 1 minute, until fragrant.
  4. Add the coleslaw mix and toss 3 to 5 minutes, until the cabbage wilts but still has some crunch.
  5. Pour in the sauce and toss 1 minute to coat.
  6. Top with the green onion tops and sesame seeds and serve.
Tip: Bagged coleslaw mix is the shortcut here. It already has shredded carrots and two kinds of cabbage, so there is nothing to chop but the onions.
Dad jokeI ordered an egg roll in a bowl and the egg roll was nowhere to be found. Turns out it was just on a roll.
