Ingredients
Green beans
- 1 lb green beans, trimmed
- 1 tbsp olive oil
- 1/4 tsp salt
Cod
- 4 cod fillets (about 6 oz each)
- 3 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tsp lemon zest
- 2 tbsp lemon juice
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped fresh parsley
Directions
- Heat the oven to 400°F. Line a large rimmed baking sheet with parchment.
- Toss the green beans with the olive oil and salt on the pan and spread them out. Roast 8 minutes.
- Meanwhile, stir the melted butter, garlic, lemon zest and lemon juice together.
- Pat the cod dry. Push the green beans to the edges of the pan and lay the fillets in the center. Season with paprika, salt and pepper, then spoon the lemon garlic butter evenly over the fish.
- Roast 12 to 15 minutes more, until the cod is opaque and flakes easily with a fork (145°F). Thicker fillets may need 2 to 3 extra minutes.
- Spoon the pan juices over the fish, sprinkle with parsley and serve with the green beans.
