Zucchini Noodle Shrimp Scampi

Garlicky lemon butter shrimp tossed with tender zucchini noodles and Parmesan. All the scampi flavor without the pasta.

Ingredients

Zoodles

  • 4 medium zucchini, spiralized
  • 1/4 tsp salt
  • 1 tbsp olive oil

Shrimp

  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 1/4 lb large raw shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes
  • 1/3 cup low-sodium chicken broth (or dry white wine)
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan

Directions

  1. Toss the zucchini noodles with 1/4 teaspoon salt in a colander and let them drain 15 minutes. Gently squeeze and pat dry with paper towels.
  2. Pat the shrimp dry. Heat the butter and 1 tablespoon olive oil in a 12-inch skillet over medium-high heat until the butter foams.
  3. Add the shrimp in a single layer and cook 1 to 2 minutes per side, until pink and just opaque. Move to a plate.
  4. Lower the heat to medium. Add the garlic and red pepper flakes and cook 30 seconds. Pour in the broth and lemon juice and simmer 2 minutes, scraping up the browned bits.
  5. Return the shrimp with the zest, salt, pepper and parsley and toss to coat. Transfer to a bowl.
  6. Wipe the skillet, add the remaining tablespoon of oil and toss the zucchini noodles over medium-high heat 2 to 3 minutes, just until hot. Do not overcook or they go limp and watery.
  7. Add the shrimp and sauce back in, toss together, and top with Parmesan. Serve right away.
Tip: Cook the zoodles last and fast. Two to three minutes is plenty, and salting them first pulls out water so the sauce does not get thin.
