Greek Yogurt Berry Parfait

Layers of vanilla Greek yogurt, three kinds of berries and toasted almonds. Pretty enough for company, quick enough for a Tuesday.

Ingredients

Yogurt

  • 1 1/2 cups plain nonfat Greek yogurt
  • 2 tsp granulated monk fruit sweetener
  • 1/2 tsp vanilla extract

Layers

  • 1/2 cup fresh raspberries
  • 1/2 cup sliced strawberries
  • 1/4 cup fresh blueberries
  • 2 tbsp sliced almonds, toasted
  • 2 tsp chia seeds

Directions

  1. Stir the Greek yogurt, monk fruit and vanilla together in a bowl until smooth.
  2. Toast the sliced almonds in a dry skillet over medium-low heat 2 to 3 minutes, stirring, until golden and fragrant. Let them cool.
  3. Toss the raspberries, strawberries and blueberries together in a small bowl.
  4. In two 10 to 12 ounce glasses, layer a quarter of the yogurt, a quarter of the berries, then repeat.
  5. Finish each parfait with half the toasted almonds and a sprinkle of chia seeds. Serve right away.
Tip: Add the almonds just before eating. If you build these the night before, keep the nuts in a separate bag so they stay crunchy.

Yes. No sugar added means none was added in processing, but sugars that are naturally in the ingredients can still be there.
Which does CDC suggest for people with diabetes: whole fruit or fruit juice?
CDC says to eat whole fruits instead of drinking juice, because juice delivers a lot of sugar at once and leaves the fiber behind.
