No-Sugar Trail Mix

A crunchy mix of almonds, walnuts, pecans, pepitas, toasted coconut and sugar-free chocolate chips.

Ingredients

  • 1/4 cup unsweetened coconut flakes
  • 1/2 cup roasted almonds
  • 1/2 cup walnut halves
  • 1/2 cup pecan halves
  • 1/4 cup pumpkin seeds (pepitas)
  • 1/4 cup sugar-free dark chocolate chips
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt

Directions

  1. Toast the coconut flakes in a dry skillet over medium-low heat, stirring constantly, 3 to 4 minutes, until golden at the edges. Tip onto a plate right away so it does not keep browning, and cool completely.
  2. In a medium bowl, toss the almonds, walnuts, pecans and pumpkin seeds with the cinnamon and salt.
  3. Add the cooled coconut and the chocolate chips and toss again.
  4. Portion into 9 small bags or containers of 1/4 cup each so a serving stays a serving.
  5. Store airtight at room temperature up to 2 weeks.
Tip: Store-bought trail mix often hides raisins, candy and sweetened cranberries. Making your own keeps a 1/4 cup serving around 2 grams net carbs.
Dad jokeI packed this trail mix for a hike, but I ate it all in the parking lot. Guess I took a shortcut.
