Parmesan Herb Popcorn

Stovetop popcorn tossed with garlic herb butter and finely grated Parmesan.

Ingredients

Popcorn

  • 1/4 cup popcorn kernels (makes about 8 cups popped)
  • 1 tablespoon avocado oil

Herb butter

  • 2 tablespoons unsalted butter
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt

Finish

  • 1/3 cup finely grated Parmesan
  • 1 tablespoon chopped fresh parsley

Directions

  1. Add the avocado oil and 3 popcorn kernels to a 3 quart or larger heavy pot with a lid. Heat over medium-high.
  2. When the test kernels pop, add the rest of the kernels in an even layer, cover and remove from the heat for 30 seconds so they all heat evenly.
  3. Return the pot to medium-high heat. Shake the pot gently every few seconds while it pops. When the popping slows to about 2 seconds between pops, 2 to 3 minutes, pour the popcorn into a large bowl.
  4. Melt the butter in a small saucepan over low heat. Stir in the Italian seasoning, garlic powder and salt and cook 30 seconds.
  5. Drizzle the herb butter over the popcorn while tossing. Sprinkle with the Parmesan and parsley and toss again until evenly coated.
  6. Serve right away.
Tip: Popcorn is a whole grain, but carbs add up fast. Measure your 1 1/3 cups into a bowl instead of eating from the big one.
