Peanut Butter Oat Energy Bites

No-bake peanut butter oat bites with flax, chia and sugar-free chocolate chips, sweetened with monk fruit.

Ingredients

Dry

  • 1 cup old-fashioned rolled oats
  • 2 tablespoons ground flaxseed
  • 1 tablespoon chia seeds
  • 3 tablespoons powdered monk fruit sweetener
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Wet

  • 1/2 cup natural creamy peanut butter (no sugar added)
  • 2 tablespoons water or unsweetened almond milk
  • 1 teaspoon vanilla extract

Mix-in

  • 1/4 cup sugar-free dark chocolate chips

Directions

  1. In a medium bowl, stir the oats, flaxseed, chia seeds, powdered monk fruit, cinnamon and salt.
  2. Add the peanut butter, water and vanilla. Stir until the mixture is evenly moistened and holds together when pressed. If it is dry, add water 1 teaspoon at a time.
  3. Fold in the chocolate chips.
  4. Refrigerate 15 minutes so the mixture firms up and is easier to roll.
  5. Scoop level tablespoons and roll into 18 balls, about 1 inch each. Set on a parchment lined plate.
  6. Chill at least 15 minutes more before eating. Store covered in the fridge up to 1 week or freeze up to 3 months.
Tip: Stir the peanut butter well before measuring. Natural peanut butter separates and the oil on top can make the bites greasy.
