Sausage and Egg Breakfast Casserole

A bread-free breakfast bake with savory sausage, peppers, mushrooms, spinach and cheddar. Feeds a crowd or a week of mornings.

Ingredients

Filling

  • 1 lb ground breakfast sausage
  • 1/4 cup diced onion
  • 1 cup sliced mushrooms
  • 1 red bell pepper, diced
  • 2 cups baby spinach, chopped

Egg mixture

  • 12 large eggs
  • 1/2 cup 2% milk
  • 1/2 tsp dried sage
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded sharp cheddar, divided

For the pan

  • Cooking spray

Directions

  1. Heat the oven to 375°F. Coat a 9x13-inch baking dish with cooking spray.
  2. Brown the sausage in a large skillet over medium-high heat, breaking it up, 6 to 8 minutes, until no pink remains. Drain off most of the fat.
  3. Add the onion, mushrooms and bell pepper to the skillet and cook 4 to 5 minutes, until the mushrooms release their liquid. Stir in the spinach until wilted.
  4. Spread the sausage and vegetables in the baking dish and sprinkle with half the cheddar.
  5. Whisk the eggs, milk, sage, salt and pepper until smooth. Pour evenly over the filling and top with the remaining cheddar.
  6. Bake 30 to 35 minutes, until puffed, golden at the edges and the center is set (160°F on an instant-read thermometer).
  7. Rest 10 minutes before cutting into 8 squares.
Tip: Assemble it the night before, cover and refrigerate. Add 5 to 10 minutes to the bake time when it goes in cold.
Dad jokeThis casserole is so good, I'd say it's the best thing since sliced bread. Which is funny, because it has none.
