Tangy vanilla Greek yogurt spread thin, studded with fresh strawberries, drizzled with dark chocolate and frozen into snappy bark.
Ingredients
Yogurt layer
- 2 cups plain whole-milk Greek yogurt
- 1/4 cup powdered monk fruit sweetener
- 1 teaspoon vanilla extract
Toppings
- 1 cup diced fresh strawberries
- 2 tablespoons sugar-free dark chocolate chips
- 1/2 teaspoon coconut oil
Directions
- Line a 9 x 13-inch rimmed pan (quarter sheet) with parchment paper.
- Stir the yogurt, powdered sweetener and vanilla until smooth.
- Spread the yogurt on the parchment in an even layer about 1/4 inch thick.
- Pat the strawberries dry with paper towels and scatter them over the yogurt, pressing lightly so they stick.
- Microwave the chocolate chips and coconut oil in 15-second bursts, stirring, until melted. Drizzle over the top with a spoon.
- Freeze at least 3 hours, until solid. Break or cut into 12 pieces and serve right away.
