Sugar-Free Blueberry Muffins

Tender almond-flour muffins packed with fresh blueberries and a hint of lemon, sweetened with monk fruit.

Ingredients

Dry

  • 2 1/2 cups blanched almond flour
  • 1/3 cup monk fruit sweetener
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Wet

  • 3 large eggs
  • 1/4 cup butter, melted
  • 1/3 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • Zest of 1 lemon

Fold in

  • 3/4 cup fresh blueberries

Directions

  1. Heat oven to 350°F. Line a 12-cup muffin tin.
  2. Whisk the almond flour, sweetener, baking powder, and salt in a large bowl.
  3. In a second bowl, whisk the eggs, melted butter, almond milk, vanilla, and lemon zest.
  4. Pour the wet ingredients into the dry and fold until just combined. The batter will be thick.
  5. Gently fold in the blueberries.
  6. Scoop the batter evenly into the 12 lined cups.
  7. Bake 22 to 25 minutes, until golden and a toothpick comes out clean.
  8. Cool 10 minutes in the tin. They firm up as they cool.
Tip: Frozen blueberries work too. Fold them in straight from the freezer so they don't bleed into the batter.

Yes. FDA says Total Carbohydrate includes total sugars, dietary fiber and sugar alcohols, so the indented lines are already part of that number.
What does "sugar free" mean on a US food label?
Under FDA rules, sugar free means less than 0.5 g of sugars per reference amount and per labeled serving.
Can a "no sugar added" food still contain sugar?
Yes. No sugar added means none was added in processing, but sugars that are naturally in the ingredients can still be there.
On a Nutrition Facts label, where do sugar alcohols get counted?
FDA counts sugar alcohols inside Total Carbohydrate, and makers may also list their grams on a separate line.
