Turkey Taco Lettuce Wraps

Smoky taco-spiced ground turkey spooned into crisp butter lettuce cups with tomato, avocado and cheddar.

Ingredients

Taco filling

  • 1 tbsp olive oil
  • 1/2 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 lb 93% lean ground turkey
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1 tbsp tomato paste
  • 1/3 cup water
  • 1 tbsp lime juice

To serve

  • 12 butter lettuce leaves
  • 1 medium tomato, diced
  • 1/2 avocado, diced
  • 1/2 cup shredded sharp cheddar
  • 1/4 cup sour cream
  • 2 tbsp chopped fresh cilantro

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the onion and bell pepper and cook 4 to 5 minutes, until softened.
  2. Add the garlic and turkey. Cook, breaking the meat into small crumbles, 5 to 6 minutes, until no pink remains.
  3. Stir in the chili powder, cumin, smoked paprika, oregano and salt and cook 1 minute.
  4. Stir the tomato paste into the water and add it to the pan. Simmer 3 to 4 minutes, until most of the liquid is gone but the meat is still juicy. Stir in the lime juice.
  5. Spoon about 1/3 cup of filling into each lettuce leaf and top with tomato, avocado, cheddar, a small dollop of sour cream and cilantro.
Tip: Butter lettuce makes the best cups because the leaves are soft and naturally curved. Double them up if any have tears.
Dad jokeI asked the lettuce wrap for a secret. It said it couldn't tell me, it had to keep it under wraps.
