Ingredients
Macaroons
- 3 large egg whites, room temperature
- Pinch of salt
- 1/2 cup powdered monk fruit sweetener
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 2 1/2 cups unsweetened shredded coconut
Chocolate drizzle
- 1/4 cup sugar-free dark chocolate chips
- 1/2 tsp coconut oil
Directions
- Heat the oven to 325°F. Line a baking sheet with parchment paper.
- In a clean bowl, beat the egg whites and salt with a hand mixer until soft peaks form, about 2 minutes. Beat in the powdered monk fruit, vanilla and almond extract until glossy.
- Fold in the shredded coconut until every shred is coated. Let it sit 5 minutes to hydrate.
- Scoop 16 mounds, about 2 tablespoons each, onto the sheet 1 inch apart. Squeeze each gently with damp fingers so it holds together.
- Bake 18 to 22 minutes, until the tops and edges are golden brown.
- Cool completely on the pan, about 30 minutes. They are soft when hot and firm up as they cool.
- Melt the chocolate chips with the coconut oil in 20 second bursts, stirring until smooth. Drizzle over the macaroons and let set, or chill 10 minutes.
