Mini Cheesecake Bites

Two-bite vanilla cheesecakes baked in a mini muffin tin on a crisp almond crust, each topped with a fresh raspberry.

Ingredients

Crust

  • 3/4 cup blanched almond flour
  • 1 tablespoon granulated monk fruit sweetener
  • 2 tablespoons unsalted butter, melted

Filling

  • 12 oz full-fat cream cheese, softened
  • 1/2 cup powdered monk fruit sweetener
  • 1/4 cup sour cream
  • 1 large egg, at room temperature
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract

Topping

  • 24 fresh raspberries (about 3/4 cup)

Directions

  1. Heat oven to 325°F. Line a 24-cup mini muffin tin with mini paper liners.
  2. Mix the almond flour, granulated sweetener and melted butter. Press a heaping teaspoon into the bottom of each liner with your thumb or the end of a wooden spoon.
  3. Bake the crusts 6 to 8 minutes, until barely golden. Set aside while you mix the filling.
  4. Beat the cream cheese until smooth, then beat in the powdered sweetener, sour cream, lemon juice and vanilla. Add the egg and mix on low only until combined.
  5. Spoon or pipe the filling over the crusts, filling each liner almost to the top.
  6. Bake 14 to 16 minutes, until the tops look matte and set but still wobble slightly when you nudge the pan.
  7. Cool in the tin 15 minutes, then refrigerate at least 2 hours. Press a raspberry onto each bite just before serving.
Tip: A small cookie scoop or a zip-top bag with the corner snipped off fills 24 tiny cups fast and evenly.
