New York Style Cheesecake with Almond Crust

A tall, dense, tangy New York cheesecake on a buttery almond flour crust, sweetened with monk fruit.

Ingredients

Crust

  • 1 1/2 cups blanched almond flour
  • 2 tablespoons granulated monk fruit sweetener
  • 5 tablespoons unsalted butter, melted
  • Pinch of salt

Filling

  • 4 (8 oz) blocks full-fat cream cheese, at room temperature
  • 1 cup powdered monk fruit sweetener
  • 1 cup full-fat sour cream, at room temperature
  • 4 large eggs, at room temperature
  • 1 tablespoon lemon juice
  • 1 teaspoon finely grated lemon zest
  • 2 teaspoons vanilla extract

Directions

  1. Heat oven to 350°F. Wrap the outside of a 9-inch springform pan in foil and set a rimmed pan of hot water on the lowest rack for steam.
  2. Stir the almond flour, granulated sweetener, salt and melted butter until it looks like damp sand. Press firmly into the bottom of the springform pan.
  3. Bake the crust 10 to 12 minutes, until the edges are light golden. Cool on a rack while you make the filling. Lower the oven to 325°F.
  4. Beat the cream cheese on medium-low speed for 2 minutes until completely smooth, scraping the bowl twice. Beat in the powdered sweetener until creamy.
  5. Mix in the sour cream, lemon juice, lemon zest and vanilla on low speed.
  6. Add the eggs one at a time on low speed, mixing only until each disappears. Overbeating adds air that causes cracks.
  7. Pour the filling over the crust and smooth the top. Bake on the middle rack 55 to 65 minutes, until the edges are set and the center 3 inches still jiggle like gelatin. The center should read about 150°F.
  8. Turn off the oven, crack the door open and leave the cheesecake inside for 1 hour. Run a thin knife around the edge, then cool on the counter 1 more hour.
  9. Cover and refrigerate at least 6 hours, or overnight, before releasing the ring and slicing into 16 pieces.
Tip: Wipe the knife with a hot, damp towel between every cut for clean, bakery-style slices.
Dad jokeI asked the cheesecake why it was so calm in the oven. It said it was just going through a phase of being set in its ways.
